6 Small Brinjal (Baingan / Eggplant)
2 Onions - thinly sliced
Figaro Pure Olive Oil - as required
12 Garlic
3 Green Chillies
1 inch Ginger
1 teaspoon Red Chilli powder
1 teaspoon Coriander Powder (Dhania)
1/4 teaspoon Asafoetida (hing)
1/2 teaspoon Turmeric powder (Haldi)
2 teaspoons Jaggery
1 teaspoon Amchur (Dry Mango Powder)
Salt - as required
