Ingredients

  • 500 grams Chicken - (chicken with bones gives better taste)
  • 1 Onion
  • 1 Tomato
  • 2 sprig Curry leaves
  • 1 tablespoon Ginger Garlic Paste
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Cumin powder (Jeera) - roasted
  • 1 teaspoon Fennel Powder - roasted
  • 1 tablespoon Coriander Powder (Dhania)
  • 2-1/2 tablespoon Black pepper powder
  • Salt - to taste
  • Sunflower Oil - as required
  • Water - as required
  • Coriander (Dhania) Leaves - for garnish

Instructions

To begin making the Chettinad arid Pepper Chicken formula, rinse the chicken thoroughly and wash it well.Place it in a container,  then mix in about 1/2 teaspoon of turmeric ground mix and aqua until chicken in fully immersed and let it sit for 10 moments. After 10 moments, sieve the turmeric aqua and augment the taste with little seasoning.

This step of washing chicken in turmeric aqua will reduce the smell in the chicken.bring to temperature oil in a kadai/wok on medium flame, mix in finely finely sliced onions and sauté till onions turn soft.Once the onions are soft, mix in ginger garlic paste and low-boil till the raw smell of the paste is gone.

mix in curry leaves and toss together well.At this stage mix in finely finely sliced tomatoes and low-boil till tomatoes turn soft and mushy.

This will take about 3-4 moments. Now mix in the marinated chettinad chicken and let it low-boil for 3-5 moments.

mix in all the masala condiment powders- cumin ground mix, fennel seeds ground mix, coriander ground mix, crushed pepper or pepper ground mix and seasoning.toss together the Chettinad arid Pepper Chicken and low-boil for another 5 moments. Now mix in about 1/4 cup aqua.

put a lid on and low-boil till the Chettinad arid Pepper Chicken is fully cooked and all aqua is evaporated.

Once done, check the seasoning and spices and adjust accordingly.scalding, scalding, flavourful Chettinad arid Pepper Chicken is ready to be served.offer Chettinad arid Pepper Chicken formula with Pickled onions as an appetizer.
