Ingredients
1 cup Dosa rice - soaked for 2 hours
1 Cucumber - cut into chunks
1/2 cup Fresh coconut - grated
1 tablespoon Salt
Sunflower Oil - for cooking
Instructions
1
To begin making the Cucumber Neer Dosa method, wash the rice and soak it in aqua for 2 hours. Grind the coconut and cucumber in a mixer to a creamy paste.Next grind the rice separately by adding 1/2 cup aqua into a very creamy paste.toss together rice and cucumber batters together in one dish and masala condiment with table salt.If the liquid base is too thick toss in enough aqua such that the dosa liquid base has a creamy flowing consistency.
2
The consistency of the liquid base should be such that the liquid base has a very thin coating at the back of the spoon and not a thick coating.
3
If it forms a thick later, then the you need to toss in a little more aqua. Check the table salt levels again and adjust to suit your essence. Cucumber Neer Dosa liquid base is now readyNeer Dosa is made very similar to the Rava Dosa.To make the Neer Dosa, we don’t spread it on the wok like a regular dosa.
4
We transfer the dosa liquid base on the scalding wok and it will spread itself creating holes.Note: It is a good idea to use an iron wok, as the texture and the softness of the dosa comes out perfectly with an iron wok.To begin, make sure you have a greased and seasoned iron wok.
5
coat and preheat the iron wok until it is sizzling scalding.
6
When you shower aqua on the wok; the aqua will sizzle and evaporate.Once you have the right scalding up on the wok; transfer a ladle of the liquid base in a circular motion starting from the outer edges.
7
The liquid base will sizzle and flow to spread itself.
8
Fill in the liquid base where there are gap, but do allow the dosa to have a few tiny holes.
9
There is no need to shower cooking oil to make the Neer Dosa.Neer Dosa cooks very quickly; when you notice the top of the dosa is no longer raw, the Neer Dosa is cooked and has a hearty white colour.
10
The making process will take less than 30 seconds per dosa.Slide a flat spatula from the sides of the wok and fold the Neer Dosa into a half and then into another half to form a triangle.
11
Place the Neer dosa on a platter and continue to make Neer Dosa’s the similar way.Make sure you place the Neer Dosa’s away from each other when they are scalding; as they tend to stick to each other.
12
Once they cool down, you can place them one on top of the other; into a covered dish and dish up toasty.dish up the Cucumber Neer Dosa method with Kori Gassi and end it with a dessert Konkani Style Mande/Mandige/Chavde method.
