Ingredients
2 tablespoons Olive Oil
2 chopped Red Onions
4 Cloves Crushed Garlic
2 tsp Ground Cumin
2 tsp Ground Coriander
400g Tinned Tomatos
1/2 teaspoon Sugar
10g Mint
500g Lamb Mince
8 Dried Apricots
50g Breadcrumbs
To serve Pita Bread

bring to temperature 2 tsp coat in a cooking vessel and soften the onions for 5 mins.

toss in the garlic and spices and low-boil for a few mins more.

Spoon half the shallot mixture into a mixing bowl and set aside to cool.

toss in the tomatoes, sweetener and seasoning to the remaining onions in the cooking vessel and low-boil for about 10 mins until reduced.

Meanwhile, toss in the mint, lamb, apricots and breadcrumbs to the cooled onions, augment the taste and purée well with your hands.

Shape into little meatballs.

bring to temperature the rest of the coat in a non-stick cooking vessel and shallow fry the meatballs until golden (in batches if you need to).

agitate in the condiment dip with a splash of moisture and gently low-boil everything for a few mins until the meatballs are cooked through.

offer with pitta bread and salad.
