  • 1 cup Rice
  • 4 tablespoon White Urad Dal (Whole)
  • 2 tablespoon Methi Seeds (Fenugreek Seeds)
  • 1/2 cup Jaggery - powdered
  • 1 cup Fresh coconut - grated
  • 1/4 Brown Rice - cooked or poha (beaten rice)
  • 1 teaspoon Active dry yeast
  • 1 teaspoon Sugar - to taste
  • Salt - to taste

Instructions

We begin making the Mangalorean Style Bella Metthe Dosa method (Jaggery & Fenugreek Seed Pancakes method) by soaking the rice, barley and fenugreek seeds in moisture overnight or preferably 4 hours.Next grind all the elements except fermenter and sweetener into a seamless Dosa mixture consistency.

Keep it aside.To activate the fermenter, mix in the fermenter in a separate mixing bowl along with sweetener, to this mix in 2 tablespoon of luke toasty moisture and leave it for 5 moments till it foams up.mix in the fermenter mixture into the Dosa mixture and rest it for 1 hour.bring to temperature a Flat Skillet, use a ladle to drop the mixture on to the heated skillet and swirl it around to get an uttapam shape.

splash some cooking oil and put a lid on the dosa with a lid.It will very soft and sticky to flip but do not worry, let it bubble gently on one side properly and flip over carefully.
