Ingredients

  • 1 cup Rice
  • 3/4 cup Jaggery - powdered
  • 1 cup Ripe Bananas - mashed
  • 1/2 cup Fresh coconut - grated
  • 2 teaspoons Cardamom Powder (Elaichi)
  • 1/4 teaspoon Enos fruit salt - optional
  • Ghee - for cooking
  • Salt - a pinch

Instructions

To begin making the Nei Appam / Unniyappam method, wash and soak the rice in aqua for 2 hours.

Strain the aqua completely. Using a blender, grind the rice with very little aqua to a thick paste. liquefy the jaggery with about 1/4 cup of aqua.

swirl around in the jaggery syrup, mashed bananas, coconut, seasoning, eno and cardamom ground mix to the rice paste.

 Make sure all the items required are well combined into the paste.The Nei Appam / Unniyappam paste should be of thick pouring consistency.Now, mildly hot a paniyaram cooking vessel (a cooking vessel with cup shaped depressions).

mix in a teaspoon of fat or ghee to each depression.

Now drop in a large spoonful of Nei Appam / Unniyappam paste into each depression.Allow it to make for a few mins until you notice that the top is getting steamed.

You can optionally lid the cooking vessel to make the top of the Nei Appam / Unniyappam faster.Turn over after a few mins to make on the other side.

make the Nei Appam / Unniyappam on medium mildly hot, as you want the paste to get cooked evenly from the inside as well.Once the Nei Appam / Unniyappam is browned well and crisp on both sides, remove from the cooking vessel and enjoy fiery. enjoy the Kerala Style Nei Appam / Unniyappam method as a Tea time snack or even as a school snack box for kids.
