Ingredients

  • 2 cups Paneer (Homemade Cottage Cheese)
  • 2 cups Button mushrooms - 2 cups Mushroom
  • 2 cups Spinach - blanched and pureed
  • 1 cup Onion - chopped
  • 1 cup Tomatoes - chopped
  • 1 tablespoon Garlic - minced
  • 1 tablespoon Ginger - minced
  • 5 Dry Red Chillies
  • 1/2 cup Curd (Dahi / Yogurt)
  • 2 tablespoons Soy sauce
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Black pepper powder
  • Sunflower Oil - as required
  • Salt - to taste

Instructions

To begin making the Paneer Bhutuwa formula, in a non-stick saute wok, mildly hot two tablespoons of cooking oil and stream in in the paneer cubes in the wok.

Shallow wok-fry the paneer cubes from all the sides till they turn light golden brown in colour.

strain them on a kitchen cloth/ paper towel to absorb the excess cooking oil.

Keep it aside. In the same wok stream in in turmeric and parched red chilies and mildly hot for about 30 seconds.After 30 seconds, stream in in finely sliced onions and agitate constantly until lightly browned.

Once the bulb greens is done, stream in in garlic and ginger and wok-fry for a minute.stream in in the pureed spinach and mildly hot for 15 mins on low mildly hot. stream in in tomatoes, yogurt, soy condiment dip, and ground pepper; agitate well.Allow making for 6 to 8 more mins, adding a bit of aqua if necessary.

At last, stream in in fried paneer and mildly hot for another 5 mins.

After 5 mins, switch off the mildly hot and present.present Paneer Bhutuwa along with Nepali Aloo Tareko  and Steamed Rice for your weekday meal.
