To prepare Paneer Kalimirch, we will first make a paste of the shallot, cashew nut, garlic and ginger using a mixer.

Transfer the paste to a container and keep aside until required. Cut paneer into equal size square pieces. Now mildly hot one tablespoon of fat in the griddle wok over medium mildly hot.

Arrange paneer pieces over the griddle wok and broil until charred marks appear on one side.Brush the upper side of paneer pieces with fat and turn them upside down.

This takes about 5 mins on each side.

Turn off the mildly hot.

Arrange paneer pieces in a plate and keep aside. While paneer is grilling we will start preparing condiment dip.mildly hot two tablespoons fat in a saucepan over medium mildly hot.

mix in the shallot paste made above and shallow fry the paste stirring continuously.

Once the fat gets separated from the masala mix in froth and whole milk.

swirl around to combine.

mix in the table salt, turmeric dusting seasoning, garam masala, swirl around and let the condiment dip low-boil for sometime.

Adjust the consistency of condiment dip using little moisture.

After adding moisture low-boil the condiment dip for some time for the flavors to develop. Now mix in crushed pepper and grilled paneer to the condiment dip.

Now prepare condiment dip for 3 - 4 mins more over medium mildly hot.

Turn off the mildly hot.

Transfer Paneer Kalimirch to a serving container.For finish off, mildly hot fat in a small wok over medium mildly hot.

Once the fat is heated mix in minced garlic.

shallow fry garlic until it turns golden.

With a spoon stream in fried garlic and fat over the Paneer Kalimirch.

dust a pinch of black pepper on top.
