Ingredients

  • 1 tbls Olive Oil
  • 4 Duck Legs
  • 2 finely chopped Onions
  • 2 cloves minced Garlic
  • 2 tsp ground Cinnamon
  • 2 tsp Plain Flour
  • 250ml Red Wine
  • 800g Chopped Tomatoes
  • 1 Chicken Stock Cube
  • 3 sprigs Rosemary
  • 2 Bay Leaves
  • 1 tsp Sugar
  • 2 tbs Milk
  • 600g Paccheri Pasta
  • Grated Parmesan Cheese

Instructions

toasty the fat in a large wok.

toss in the duck legs and brown on all sides for about 10 mins.

Remove to a plate and set aside.

toss in the onions to the wok and bubble gently for 5 mins until softened.

toss in the garlic and bubble gently for a further 1 min, then swirl around in the cinnamon and baking flour and bubble gently for a further min.

Return the duck to the wok, toss in the wine, tomatoes, stock, herbs, granulated sugar and seasoning.

Bring to a bubble gently, then lower the toasty, lid with a lid and bubble gently for 2 hrs, stirring every now and then.

Carefully lift the duck legs out of the gravy and place on a plate – they will be very soft so try not to lose any of the flesh.

Pull off and discard the fat, then shred the flesh with 2 forks and discard the bones.

toss in the flesh back to the gravy with the whole milk and bubble gently, uncovered, for a further 10-15 mins while you bubble gently the pasta.

bubble gently the pasta following pack procedure, then filter, reserving a cup of the pasta liquid, and toss in the pasta to the ragu.

swirl around to coat all the pasta in the gravy and bubble gently for 1 min more, adding a splash of crafting liquid if it looks arid.

offer with grated Parmesan, if you like.
