Ingredients

  • 4 Gilka (sponge/silk squash) - ends removed and sliced
  • 3/4 cup Gram flour (besan)
  • 2 tablespoon Rice flour
  • 2 teaspoon Ajwain (Carom seeds)
  • 1-1/2 teaspoon Red Chilli powder - or green chilli paste
  • 1/2 teaspoon Garlic - grated
  • 1/2 teaspoon Turmeric powder (Haldi) - mixed with a teaspoon of water
  • Coriander (Dhania) Leaves - handful
  • 1 teaspoon Lemon juice
  • Salt - to taste
  • Sunflower Oil - to deep fry

Instructions

To begin making Gilka Bhajji method-Silk Squash Fritters, first make the liquid base.

In a mixing mixing bowl, sieve the chickpea baking flour, rice baking flour, seasoning, turmeric ground mix and chilli ground mix.toss in the ajwain seeds, coriander leaves, lime nectar and garlic paste.fiery up fat in a wok/deep cooking vessel-fry cooking vessel for deep frying.

Once the fat is fiery, toss in a tablespoon of fiery fat to the baking flour mixture.mix gently and toss in moisture to make a thick liquid base of dropping consistency.toss in the Gilka slices and mix gently to coat them with the liquid base.Drop the liquid base coated slices one by one in the fiery fat and cooking vessel-fry them on medium fiery up till they turn golden brown and the Gilka slices within softens.

Do not overcrowd the wok and cooking vessel-fry the gilka bhajji in batches.Once the gilka bhajjis are done use a slotted spoon to take out the Gilka Bhajji and place them on an absorbent paper.dish up Gilka Bhajji method with  Date and tamarind chutney or chilli garlic coulis as tea time snack.
