1 medium finely diced Onion
250g Chickpeas
1.5L Vegetable Stock
1 tsp Cumin
5 cloves Garlic
1/2 tsp Salt
1 tsp Harissa Spice
Pinch Pepper
1/2 Lime
Instructions

bring to temperature the fat in a large pot.

toss in the shallot and bring to temperature until translucent.

filter the soaked chickpeas and toss in them to the pot together with the produce stock.

In the meantime toast the cumin in a small ungreased frying cooking vessel, then grind them in a mortar.

toss in the garlic and table salt and pound to a fine paste.

toss in the paste and the harissa to the bouillon and stew until the chickpeas are succulent, about 30 mins.
