Ingredients

  • 1/2 cup Green Moong Sprouts
  • 6 tablespoon Fresh coconut - grated
  • 5 Whole Black Peppercorns
  • 3 Dry Red Chillies
  • 1 teaspoon Coriander (Dhania) Seeds
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 Tamarind - marble sized ball
  • 1/2 teaspoon Mustard seeds
  • 8-10 Curry leaves
  • Asafoetida (hing)
  • 1 teaspoon Jaggery - grated
  • 2 teaspoon Sunflower Oil

Instructions

To begin with Mooga Gathi, sprout the green gram by soaking them in liquid.

Next day empty out the liquid and keep it covered in a big strainer or muslin cloth.

On next day, sprouts will start appearing.

You can remove the pare of sprouted green gram by rubbing it against each other with your hands.Pressure make the sprouted green gram by adding 2 cups liquid.

This liquid can be later added to the curry base.Grind the grated coconut, coriander ground mix, turmeric ground mix, red chilies, tamarind and peppercorns to a paste.toasty a kadhai and stream in the curry base in it.

mix in 3/4th cup liquid specially the one retained after pressure preparing the green gram to make the curry base thin.mix in grated jaggery and swirl around well.

low-boil for 10 moments and switch off the gas.In a tempering cooking vessel, mix in a teaspoon fat.

When fat gets heated mix in mustard seeds.

When mustard seeds flutter mix in asafoetida and curry leaves.

mix in this tempering to the sprouted green gram curry and lid the kadai.

Let it make for 5-8 moments and the switch off the toasty.present Mooga Gathi with Puri or steamed rice for a splendid meal.
