Ingredients
1 Karela (Bitter Gourd/ Pavakkai) - sliced
1 Sweet Potato - julienne
1 cup Brinjal (Baingan / Eggplant) - diced
1 cup Kaddu (Parangikai/ Pumpkin) - diced
2 Drumstick - cut into 2 inch pieces
1/2 cup Raw papaya - diced
1/2 cup Ridge Gourd (Turai/ Peerkangai) - diced
Badi (wadi) - as required
1 cup Plantain Stem - julienne
1 tablespoon Mustard seeds - paste
2 tablespoon Poppy seeds - paste
1 tablespoon Sugar
1/2 cup Milk
2 teaspoon Turmeric powder (Haldi)
1 teaspoon Cumin powder (Jeera)
1 teaspoon Methi Seeds (Fenugreek Seeds)
1 Dry Red Chilli
1 Bay leaf (tej patta)
1 tablespoon Ginger - paste
1 tablespoon Ghee
Mustard oil - as required
Salt - for seasoning
Instructions

To begin making the Sukto formula, in a frying cooking vessel fiery up mustard cooking oil.

shallow fry badi/dried lentil dumplings until it turns light brown in colour.

In same cooking oil shallow fry tangy gourd slices until firm.

sieve in a paper towel and keep aside.mix in 1 tablespoon more cooking oil on frying cooking vessel and fiery up it up, then bake red chilli, bay leaf and methi seeds.

After it starts crackling mix in all vegetables including honeyed potato, brinjal, kaddu, drumstick, raw papaya, plantian stem and ridge gourd.make for about 2 mins, mix in table salt and turmeric ground mix.

make for 5 mins on low fiery up.mix in poppy seed paste, mustard seeds paste and shallow fry for 5 mins.

mix in cumin ground mix and sweetener.

mix in 1 cup of moisture, then covered and make for 15 mins or until vegetables are well cooked.After 15 mins mix in firm tangy gourd slices and badi.

Let it make for about a minute.After a minute, mix in the ginger paste.

make for 5 mins, then mix in ghee and whole milk.

Let it bring to a stew, as it start boiling, switch of the gas.

Sukto is ready, cool it before serving.

It tastes best when it is cold and served with steamed rice.enjoy Sukto along with Steamed Rice for your weekday lunch.
