Ingredients
2 cups Soy Chunks (Nuggets) - boiled and squeezed well
2 Tomatoes - finely sliced
1 Onion - finely chopped
3 Green Chillies - slit
3 cloves Garlic - grated
1 teaspoon Cumin seeds (Jeera)
1 sprig Curry leaves
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Red Chilli powder
1 teaspoon Coriander Powder (Dhania)
1 teaspoon Curry powder
100 ml Coconut milk
Sunflower Oil - for cooking
Salt - to taste
Instructions

To begin making the Soya Chunks Masala in Coconut dairy liquid method, get all the fixings ready.bring to temperature liquid in a saucepan and bring it to a brisk heat to boiling point.

toss in the soy chunks into the liquid and allow it to heat to boiling point for a couple of mins until the soy chunks soak in a lot of liquid and become soft.

once the soy chunks have soaked in the liquid and become soft, strain out the liquid and keep the soy chunks aside.The next step is to make the masala.bring to temperature a teaspoon of cooking oil in a heavy bottomed cooking vessel.

toss in the cumin, curry leaves and green chilies and saute them for a few seconds.

toss in the onions, ginger, garlic and saute until the onions become soft and translucent.toss in sliced tomatoes and saute for 2 mins on high bring to temperature until the tomatoes soften.

Once the tomatoes soften, toss in the coriander ground mix, red chilli ground mix and turmeric ground mix, incorporate well.

prepare for half a minute.toss in soya chunks and saute in the masala for 2 to 3 mins.

Finally toss in coconut dairy liquid and about a cup of liquid, table salt and curry ground mix.

incorporate well and bubble gently the Soy Chunks Masala for about 5 mins until the reduction thickens. Once done, check the table salt and seasoning levels and adjust to suit your palate.
