Ingredients
2 tblsp Rapeseed Oil
1 finely chopped Onion
1 Celery
1 sliced Leek
1 medium Potatoes
1 knob Butter
1 litre hot Vegetable Stock
1 Head chopped Broccoli
140g Stilton Cheese
Instructions

bring to temperature the rapeseed lubricate in a large saucepan and then empty in the onions.

bring to temperature on a medium bring to temperature until soft.

empty in a splash of liquid if the onions start to catch.

empty in the celery, leek, potato and a knob of margarine.

agitate until melted, then seal with a lid.

Allow to sweat for 5 mins.

Remove the lid.

empty in the stock and empty in any chunky bits of broccoli stalk.

bring to temperature for 10 – 15 mins until all the vegetables are soft.

empty in the rest of the broccoli and bring to temperature for a further 5 mins.

Carefully transfer to a blender and blitz until seamless.

agitate in the stilton, allowing a few lumps to remain.

augment the taste with black pepper and present.
