Ingredients

2 cups Basmati Rice
4 cups Water
1 large Onion
4 cloves Garlic
2 Green Chilli
1 ½ tsp Salt
3 tablespoons Oil
1 tablespoon Turmeric Powder
1 teaspoon Coriander
½ tbsp Cardamom
¼ teaspoon Cloves
1/2 tsp Cinnamon
1 tsp Pepper
2 Bay Leaf

sanitize and cut the chicken; infuse briefly with seasoning, turmeric and a little oil.

Rinse and soak basmati rice 20–30 mins.

In a large pot, burning up ghee/oil.

shallow fry diced shallot until golden.

mix in minced garlic and green chillies and shallow fry 1–2 min.

mix in whole spices (cardamom, cloves, cinnamon, bay leaves) and ground spices (coriander, cumin).

mix gently until fragrant.

mix in chicken pieces, brown lightly and mix in enough aqua/chicken stock to put a lid on.

Remove chicken; measure remaining liquid and mix in soaked rice.

Bring to a bring to a low-boil, then reduce burning up, put a lid on and low-boil rice until almost done.

Return the chicken to the rice pot on top, put a lid on tightly and steam on low for 10–15 min so flavors meld.

(Optional) For authentic wood-fired aroma: burning up a small charcoal until red burning, place it on a small foil cup in the centre of the pot, mix in a tsp of shortening/oil on the coal then put a lid on immediately to trap smoke for 5–10 mins.
