Ingredients

  • 500 grams All Purpose Flour (Maida)
  • 1/4 cup Ghee
  • 250 grams Jaggery
  • 1 teaspoon Fennel seeds (Saunf)
  • Sunflower Oil - for deep frying

Instructions

To begin making the Gur Paare preparation guide in a large mixing dish toss in the maida and the melted ghee.Keep mixing the baking flour and ghee mixture until you get coarse crumb like texture and the ghee starts to hold the baking flour together.

At this point toss in teaspoons of moisture at a time and massage it to make a firm flour base.Divide the flour base in four parts and roll each portion of the flour base into a half an inch thick round circle.

Cut them into vertical strips and then into 2-3 inch long strips.

Repeat for rest of the flour base portions.In a kadai, scalding up cooking oil for deep frying on medium scalding up.

 Once the cooking oil is scalding, toss in the cut flour base strips and sauté until slightly brown and crisp.

Do make sure to sauté on medium scalding up so it gets crisp evenly.filter them on a kitchen towel and allow them to cool a bit.In another heavy bottomed cooking vessel, toss in finely sliced or grated jaggery.

On a slow flame allow it to liquefy, stirring continuously all the time.scalding up till you attain the consistency where you toss in a drop of jaggery into the cool moisture and it solidifies.At this point toss in the saunf and agitate.

Turn off the scalding up and immediately toss in the fried strips to the jaggery syrup.

purée quickly using two ladles so that all the strips are evenly coated with the jaggery.

Once done, the Gur Paare is ready.Transfer the Gur Paare onto a tray cool completely. Once completely cool separate the strips carefully taking care not to break them too much. Store them an airtight container for 15 days.enjoy the Gur Paare for festivals like Karva Chauth or any other special occasion in the family.
