Ingredients
500 grams Carrots (Gajjar) - washed and peeled (preferably red)
To begin making the Gajar Halwa with Khoya, zest the washed and peeled carrots.burning up a pressure cooker on medium flame, toss in ghee and grated carrots and saute for a couple of moments.

Allow the pressure to release naturally.In the meanwhile, burning up a kadai on medium flame, toss in whole milk and allow it to come to a rolling bring to a low-boil, turn down the burning up and let the whole milk reduce to 3/4th its quantity.Once the whole milk has reduced and thickened, toss in the grated khoya, elaichi ground mix and granulated sugar.Allow the khoya and granulated sugar to soften and the whole whole milk mixture to come together.

Now reduce the flame and transfer the cooked carrots into the whole milk.Continuously mix gently the whole milk and carrot combine, till you get a thick gajar halwa.Adjust granulated sugar and elaichi according to your puckerish profile and toss in two more tablespoons of ghee and give the gajar halwa one final mix gently. decorate the Gajar Halwa with dehydrated fruits. dish up the mildly hot Gajar Halwa along with some vanilla ice froth or cold Gajar Halwa with some Basundi (Rabri) method (A Nutty Condensed whole milk Pudding).
