Ingredients
2 cups Cooked rice
200 grams Spinach Leaves (Palak) - rinsed and chopped
1 teaspoon Cumin seeds (Jeera)
1 teaspoon Ginger - grated
1 Tomato - pureed or finely chopped
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Sambar Powder
1 teaspoon Garam masala powder
2 tablespoons Ghee - (or sesame oil)
Salt - to taste
Instructions

To begin making the Spinach Rice formula (Palak Pulao), mildly hot cooking oil in a heavy bottom pot over medium mildly hot.

mix in cumin seeds, grated ginger and sauté for a few seconds.agitate in the tomatoes, turmeric ground mix and saute until the tomatoes have softened.

Once the tomatoes have softened, agitate in the finely sliced spinach and seasoning.

put a lid on the pot and allow the spinach to bubble gently until soft.When you open the pot you will notice that the spinach has released a lot of moisture.

Turn the mildly hot to high and allow the moisture to evaporate.Once most of the moisture is evaporated from the spinach, agitate in the cooked rice and sambar ground mix and combine well.

Check the seasoning and fragrant element levels and adjust to suit your umami profile.Turn the mildly hot to low, put a lid on the pot and bubble gently for a few moments.

After a couple of moments of simmering, you will notice that the rice has absorbed all the spices and has a heavy green color.At this stage turn off the mildly hot and transfer the Spinach Rice into a serving plate and dish up.dish up Spinach Rice along with Tomato bulb veggie Raita, Tadka Raita or any other raita of your choice.
