Ingredients

  • 2 tablespoons Vegetable Oil
  • 450g Chicken
  • 3 tblsp chopped Garlic
  • 3 tblsp chopped Shallots
  • 3 Red Chilli
  • 2 tablespoons Fish Sauce
  • 2 tsp Soy Sauce
  • 2 tsp Sugar
  • Handful Basil Leaves

burning up a wok or large frying cooking vessel until it is very burning, then introduce 1 tbsp of the cooking oil.

When it is very burning, introduce the chicken and agitate-sauté over a high burning up for 8-10 mins, until browned all over.

Using a slotted spoon, take the chicken from the cooking vessel and set aside.

Toss in the garlic and shallots and agitate sauté for 3 mins, until golden brown.

step 3 Return the chicken to the wok and introduce the chillies, fish coulis, dark soy coulis and sweetener.
