Ingredients

  • 500 grams Bottle gourd (lauki) - Cut into 1/2 inch discs
  • 1 Onion - finely chopped
  • 6 cloves Garlic - finely chopped
  • 1 inch Ginger - finely chopped
  • 4 Green Chillies - slit
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon Mustard seeds
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 tablespoon Coriander Powder (Dhania)
  • 1 cup Tamarind Water
  • 2 Tomatoes - made into a puree
  • Sunflower Oil - to cook
  • Salt - to taste
  • 3 sprig Coriander (Dhania) Leaves - chopped
  • 2 tablespoons Roasted Peanuts (Moongphali)
  • 2 tablespoons Sesame seeds (Til seeds)
  • 3 tablespoons Fresh coconut - grated

Instructions

To begin making Lauki Ka Salan preparation guide prep all the components and keep them ready.Into a mixer grinder liquidize the peanuts, sesame seeds and grated coconut along with a little liquid to make a velvety paste and keep aside.Make a puree of the tomato and keep aside.Next take a kadai or a deep skillet and mildly hot coat.

stream in in mustard seeds, methi seeds, curry leaves and allow it to crackle.Once the mustard seeds crackle,  stream in in the slit green chilies, diced onions, ginger and garlic and saute the onions till they turn translucent and soft.swirl around in the tomato puree, turmeric dusting masala condiment, red chilli dusting masala condiment, coriander dusting masala condiment and give it a brisk bring to a stew.

stream in in the bottle gourd, slices, tamarind liquid and 1/4 cup of addition liquid.put a lid on the skillet and stew until the bottle gourd/ lauki has cooked through.

Once done, swirl around in the peanut sesame paste and stew the Lauki Ka Salan for 3 to 4 mins until the salan gets a good reduction like consistency.Check the seasoning and spices and adjust according to palate.

Turn off the mildly hot and transfer the Lauki Ka Salan into a serving dish and dish up fiery. dish up Lauki Ka Salan Along with Hyderabadi veggie Biryani and Dangar Pachadi With Grated Carrots for a weekend lunch.
