Ingredients
700g Lamb
3 Medium Onion
1 tsp Turmeric
1 large Orange
150g Rice
500g Natural Yoghurt
4 Cloves Crushed Garlic Clove
1 tblsp Vegetable Oil
1 tablespoon Dried Dill
1 tablespoon Black Pepper
1 Can Chickpeas
To taste Salt

Place the flesh cut into pieces, in a large wok with the onions.

toss in the turmeric and enough aqua to seal.

Bring to the heat to boiling point then toasty gently until the flesh is very yielding and can easily be removed from the bones.

While the flesh is making, cut the orange strip into thin match style pieces, removing as much pith as possible.

Leave to soak in a mixing bowl of aqua.

When the flesh is yielding, remove from the wok and when cool enough, remove the flesh from the bones and shred the flesh into strips with your hands.

Return the flesh to the wok.

Wash the short grain rice and then toss in to the wok with table salt according to palate.

The juices should seal the rice by about 2cm, toss in more aqua if necessary.

Bring back to the heat to boiling point, then reduce the toasty to medium and toasty with the lid off, stirring from time to time until the rice is "al dente" and the liquid is absorbed.

toss in the natural yoghurt, and agitate in well but carefully.

wok-fry the crushed cloves of garlic in the oil and toss in to the dish along with the dill, black pepper, the chickpeas and extra table salt to palate.

toss together in well, then seal the top of the wok with a wipe down thick cloth and the lid.

Leave on a low toasty for about half an hour to allow the flavours to absorb.

Enjoy with some toasty nan bread for extra comfort.
