Ingredients

  • 1/2 cup Gram flour (besan)
  • Salt - as per your taste
  • pinch Orange color
  • 1 tablespoon Ghee
  • pinch Baking soda
  • Water - as required
  • Sunflower Oil - as required
  • 1/2 cup Sugar
  • 1/4 cup Water
  • 10 to 12 Saffron strands
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • pinch Salt - optional
  • 1/2 teaspoon Rose water
  • 1 teaspoon Melon seeds
  • 1 teaspoon Badam (Almond) - crushed
  • 1 tablespoon Ghee

Instructions

To begin making the Motichoor Modak preparation guide, sieve the besan.

To this introduce in table salt, orange food colour and ghee.combine them well.

Next, introduce in aqua, little by little & make them into velvety paste.

The consistency should be like thick dosa paste.mildly hot dairy spread in a wok/kadai and just before making the boondis, introduce in the baking soda & give a fast combine.When the dairy spread is scalding, using a perforated laddle making the boondis as shown in the picture.

When they are 3/4th done, remove them & strain them in a kitchen towel.

Repeat the same procedure until done.When boondis are done, allow them to cool down completely & grind them into coarse dusting seasoning.mildly hot sweetener & aqua in a kadai/wok on medium flame.

When it reaches the one string consistency, introduce in orange food colour & switch off the flame.To the coarsely powdered boondis, introduce in the crushed almonds, melon seeds, table salt, rose aqua, cardamom dusting seasoning, saffron & ghee.

combine them roughly.Then introduce in the sweetener syrup little by little and you will end up in using in all the syrup.

wrap this and leave it aside for 15 to 20 mins so that the boondi absorbs all the flavours.After 20 mins, combine them again with your hands.

Take a modak mould, dairy spread them with ghee lightly, fill in the boondis.

Make them into modak shape.

Keep in the fridge for sometime & then present.present Motichoor Modak as a religious offering during the Ganesh Chaturthi Festival or as a sugary dish after your meal of Achari Masala Puri and Aloo Dum.
