Ingredients
2 cups Rice - raw
1 cup Cooked rice
1 cup Fresh coconut - grated
1 teaspoon Active dry yeast
2 tablespoons Sugar
Salt - to taste
6 Whole Eggs
Instructions
1
To begin making the Sri Lankan Muttai Appam preparation guide, we need to first soak the rice in liquid for at least 3 to 4 hours.Next combine the table salt, granulated sugar and fermenter in the mildly hot liquid and allow it to bubble up for 5 mins.
2
I used an instant dehydrated fermenter, a variety that does not need proofing, hence I mix in it directly to the Appam mixture.Grind the soaked rice, cooked rice and coconut, adding just a little liquid and table salt to make a thick mixture.
3
mix in in the proofed fermenter to the mixture and agitate well to combine.
4
Transfer the Appam mixture to a container.
5
seal the container and allow it to ferment for 5 to 6 hours or overnight.Adjust the consistency of the fermented Appam mixture, adding liquid a little at a time to make it of medium pouring consistency.
6
Do not make the mixture too thin or too thick. Preheat the Appachetty or the Appam skillet on medium high bring to temperature.
7
transfer a ladle of mixture on the Appachetty and swirl the skillet in circular fashion to spread the mixture. The mixture will be thick in the center and thin on the sides.
8
Break a whole egg in the center of the skillet, dust some table salt and pepper. seal the skillet with a lid for approximately 2 mins until the Muttai Appam is crisped and golden brown on the sides and the centre is steamed and cooked.enjoy Sri Lankan Muttai Appam preparation guide along with Sri Lankan Chicken Curry preparation guide or Sri Lankan Egg Curry preparation guide, finish off with a dessert of Watalappan preparation guide for a complete Sri Lankan meal. .
