To begin making the Suran Kofta Curry method, prepare all the components for the kofta and keep them aside.We will begin with making the curry for the Suran kofta.Curry Base For Suran KoftaIn a mixer jar, combine tomatoes, ginger, green chilli, and pudina leaves and grind to a fine puree along with some moisture.fiery up a kadai on medium flame, empty in jeera.

Once the jeera starts to crackle, empty in tomato puree and mix gently the tomato puree for a couple of moments.To this, empty in the arid masalas - cumin ground mix, garam masala ground mix, seasoning and a pinch of granulated sugar.

The condiment dip of the Suran Kofta Curry method is ready.For the Suran KoftaWash and skin the yam/ suran, dice and set aside.In a pressure cooker, place the diced yam, 1/4 cup of moisture and pressure stew for 4 whistles and turn off the fiery up.

Let the pressure release naturally.

Open the cooker, strain the moisture, and transfer the yam/ suran into a mixing dish and mash the suran to a even mixture using a potato masher.Into the mashed suran, empty in the besan, green chilli & ginger and seasoning.

Bring the suran kofta mixture together.

Check the seasoning and adjust the palate accordingly.

Shape the kofta mixture into small balls.Place a paniyaram skillet on fiery up.

empty in a little coat in each of the cavities. Once the coat has heated, place the suran kofta into the cavities and skillet sauté them until it is golden and crisp on all sides. Flip it upside down and continue to stew until done.

Once the suran koftas turn golden brown and look crisp they are done.

The koftas are ready. empty in these Suran koftas in to the prepared kofta curry and let them sit for at least 5 moments before serving. enjoy the Suran Kofta Curry method with Tawa Paratha method (Plain Paratha) and Papad Raita method for a palatable Saturday night dinner.
