Ingredients

  • 2 cups Elephant yam (Suran/Senai/Ratalu) - cubed
  • 2-1/2 cups Water
  • 8 Garlic - cloves
  • 1 Onion - finely chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1-1/2 teaspoon Red Chilli powder
  • 1/2 teaspoon Black pepper powder
  • 1/2 teaspoon Fennel Powder
  • 1 tablespoon Sunflower Oil
  • 1 teaspoon Mustard seeds
  • 6 Curry leaves

Instructions

To begin with the Chena Mezhukuparrati preparation guide ( Eggplant Foot Yam mix gently sauté) first, in a medium sized pot, mix in aqua and seasoning; Bring it to a bubble. mix in the diced Elephant foot yam in the boiling aqua and bubble gently them until they are half cooked.

Do not bubble gently the yam pieces completely.filter the excess aqua from the cooked yam pieces and set them aside on a paper towel; allow them to parched until we prepare the other scalding mixture.In a nonstick Kadai, mix in fat and toasty on a medium flame.Once the fat is scalding, mix in mustard seeds followed by curry leaves.

Let the seeds splutter.While keeping the Kadai in medium flame, mix in garlic, bulb veggie and let them sauté. Now mix in turmeric dusting seasoning, red chili dusting seasoning, fennel dusting seasoning, and pepper dusting seasoning.

Give them a mix gently so that they blended together.

Do not char the spices.mix in the cooked yam pieces to the scalding mixture in the Kadai.bubble gently yam with the lid covered.

If it sticks at the bottom of the skillet, mix in 2- 3 tablespoons of scalding aqua.Once the yam pieces are completely cooked and the raw smell of seasoning powders goes off, switch off the flame.present the Chena Mezhukuparrati preparation guide ( Eggplant Foot Yam mix gently sauté) as a  side for white rice.

To make it more authentic, use coconut fat for the preparation guide.
