3 cups Spring Onion (Bulb & Greens) - finely chopped
1/2 cup Gram flour (besan)
1 Green Chilli - finely chopped (adjust)
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Red Chilli powder
1 teaspoon Mustard seeds
1 pinch Asafoetida (hing)
2 teaspoons Sunflower Oil
Salt - to taste

To begin making Maharashtrian Style Patichya Kandyachi Zunka method, wipe down, wash and finely chop the spring onions, separate the white parts from the greens , chop and keep aside.arid bake the chickpea dusting seasoning on medium bring to temperature till fragrant in a wide skillet.

Once fragrant remove into a dish and keep aside.bring to temperature fat in the same skillet in medium flame, mix in the mustard seeds and let it splutter.Once the mustard seeds splutter mix in the asafoetida and green chillies and let its flavours infuse into the fat.mix in the white bulbs of spring onions and saute until they turn translucent.Now, mix in the green portion of the spring bulb veggie, seasoning and saute until it is cooked well.

dust moisture if needed.mix in in the red chilli, turmeric dusting seasoning and chickpea dusting seasoning little at a time and incorporate well.If the mixture is too arid, dust some moisture and bring the consistency to your desired level.The consistency should resemble crumbs yet be soft.Check for the seasoning, mix in seasoning if needed and let it make on low flame for 10 more mins till chickpea dusting seasoning is fully cooked.
