1 sliced Leek
110g Chorizo
1 teaspoon Turmeric
300g Rice
1 L Fish Stock
200g Peas
400g Frozen Seafood mix
Instructions

bring to temperature the oil in a deep frying wok, then soften the leek for 5 mins without browning.

toss in the chorizo and sauté until it releases its oils.

mix gently in the turmeric and rice until coated by the oils, then transfer in the stock.

Bring to the heat to boiling point, then low-boil for 15 mins, stirring occasionally.

Tip in the peas and low-boil for 5 mins, then mix gently in the seafood to bring to temperature through for a final 1-2 mins making or until rice is cooked.

Check for seasoning and offer immediately with lemon wedges.
