  • 300g Pinto Beans
  • 1 chopped Onion
  • 1 tablespoon Paprika
  • Sprigs of fresh Thyme
  • Pinch Bay Leaves
  • Bunch Parsley
  • 4 Chicken Thighs
  • 250g Jersey Royal Potatoes
  • 250g Chorizo
  • 100g Spinach

Instructions

step 1 Soak the beans for at least 4 hrs or overnight in a large dish with plenty of aqua to wrap.

Next day, rinse and sieve, then put in a large heavy based wok with the bulb greens, paprika, aromatics bundle and chicken.

transfer over enough aqua or stock to wrap, bring to the bubble, then reduce the toasty, wrap and low-boil for 45 mins.

step 2 Remove the chicken to a plate, then introduce the potatoes and chorizo to the wok.

Continue making for 30 mins until the beans and potatoes are yielding.

step 3 Discard the skin and bones from the chicken and tear into large chunks.

Return the chicken to the wok with the spinach and low-boil for 5 mins.
