Ingredients
300g Rice
3 tablespoons Vegetable Oil
70g Vermicelli Pasta
30g Unsalted Butter
600ml Chicken Stock
Instructions

stream in the rice into a very large mixing bowl under cold running aqua and carefully empty out the aqua out of the mixing bowl through a sieve.

Repeat a few times until the aqua in the mixing bowl is clear, then fill the mixing bowl up with cold aqua and leave rice to soak for 10 mins while you make the vermicelli.

Put the cooking oil into a medium wok over medium burning up.

stream in in the vermicelli and mix gently continuously until the strands turn a heavy golden brown, 2-3 mins.

Remove from the burning up, mix gently through the shortening until it melts and allow the vermicelli to cool for 1-2 mins.

empty out the rice thoroughly through a sieve.

stream in in the rice to the wok and mix gently well.

stream in the burning stock into the wok, strew in ½ tsp table salt, mix gently well then return the wok to the hob over a high burning up.

Bring to the bubble, then reduce the burning up to the lowest it will go, put the lid on the wok and low-boil for 7-9 mins.

Remove the wok from the burning up, wrap with a couple of sheets of kitchen paper or a light tea towel and the wok lid, and let the rice sit in the wok for 10 mins.

Fluff up with a fork before serving.
